Is there a minimum age for recruitment? Something in the figure of 7?

Ya, the minimal age for membership with 501st is 18 years old.

For young ones, they could "join" the Imperial Training Academy

but it's more a "For Fun" internet kind of thinging for the children/sibling/nephew/niece of current 501st members.
