Because the new Toys R Us exclusive is green whereas the preview set is yellow. Which is more accurate?

Both, I think. The Yellow fighter probably became scrap metal inside the Federation Cruiser.

Since we're on this topic, what was the colour of Obi-Wan's replacement Starfighter?

Yellow and Green.....
I don't really remember that but it sure makes sense though I'm not sure if Obi-Wan changed the color of his Jedi Starfighter though...

I think all of Obi-Wan's fighters had the same colours.

Obiwan first starfighter at the beginning of the show, is that silver grey/Red stripes which got attacked by buzz droids. When he flew to Utapau in a covert mission, it was an all silver grey fighter.OKK77 wrote:I think all of Obi-Wan's fighters had the same colours.
As for the toys, personally I prefer the silver grey/Red version than Anakin's while/Green one.
